german pancake

breakfast is by far my favorite meal of the day. sometimes i even sneak it in for dinner...
breakfast+dinner= brinner.
 and these german pancakes are on my list of goodness.
thought i would share it with my peeps. enjoy :)
ricky even likes them. he ate half of it last time it was made.

whole wheat german pancakes
2 tablespoons unsalted butter
4 large eggs
1 cup milk
2 tablespoons cane sugar
1/2 teaspoon ground cinnamon
1/4 salt
3/4 wheat flour
2 pears, cored and thinly sliced

preheat oven to 425 F. Place butter in a large cast iron or oven proof skillet and heat in the oven until butter is melted.
in a blender, combine eggs, milk, sugar, cinnamon, and salt. blend until smooth. add flour and blend again. remove skillet from oven, swirl butter to coat the bottom and sides of the pan, and pour in the batter. top with pears and bake 18-20 minutes. sprinkle with powdered sugar.
